This spicy cantaloupe salad is perfect for snacking on poolside. Fruity, spicy and super and very refreshing on a hot summer day.
Ingredients
- 1/2 small cantaloupe cut into long spears
- 2 mangos, cut into spears
- 1/4 red onion, thinly sliced
- 1/2 tbsp tajin
- 1/2 cup fresh basil, plus extra for topping
- 1/2 cup white balsamic vinaigrette
- 3 oz Athenos feta cheese crumbles
Method
- In a medium bowl mix together cantaloupe spears, mango spears, red onion, tajin, basil and white balsamic vinaigrette until combined.
- Transfer mixture to a serving platter. Top fruit with feta cheese crumbles and extra fresh basil leaves.
