A simple work-from-home lunch that is made in minutes. These tasty Mediterranean lettuce cups can use up leftover chicken or made with rotisserie chicken for a quick 10-minute lunch.
Ingredients
- 8 butter lettuce leaves / cups
- 2 cups shredded rotisserie chicken
- 1 cup tzatziki
- 1 cup chopped cucumber
- 1/2 cup cherry tomatoes, quartered
- 1/2 cup Athenos Crumbled Traditional Feta Cheese
- Pickled red onions, optional
Method
- Add 1/4 cup of shredded chicken to each lettuce cup. Top with 1 tbsp of tzatziki evenly. Top each cup with chopped cucumbers, cherry tomatoes, and a sprinkle of feta cheese crumbles. Garnish with pickled red onions if desired.
