Jar salads are a great way to mix up your salad game! Mix and match any ingredients and vegetables to your liking. Just be sure to place the vinaigrette or dressing on the bottom with your heartiest grains, beans, or vegetables next to ensure the salad stays fresh and crisp!
Ingredients
- 1 cup canned chickpeas, drained
- 1/3 cup vinaigrette of choice
- 1 cup halved cherry tomatoes
- 1/2 cucumber, diced
- 1 red bell pepper, diced
- 1/3 cup tbsp Traditional Athenos Feta Crumbled Cheese
- 4-6 cups greens (arugula, romaine, etc)
Method
- Place chickpeas into the bottom of one large mason jar or evenly divided into four mason jars and drizzle the vinaigrette on top. Putting the chickpeas on the bottom allows the remaining vegetables/salad to not become soggy.
- Continue to layer the salad with cherry tomatoes, cucumbers, bell peppers, feta cheese crumbles, and greens.
- Turn the jar upside down into a bowl when serving and mix together. Top with croutons if desired.
