Peek pasta salad is upon us, and the Mediterranean is the way to go! This pasta salad is brimming with Mediterranean flavors like sun-dried tomatoes, Greek vinaigrette, and sharp feta cheese!
Ingredients
- ½ lb penne pasta noodles
- ½ small red onion, thinly sliced
- ½ persian cucumber, quartered
- 4 oz Athenos Feta chunk, cubed or crumbles
- 1 cup cherry tomatoes, halved
- ¼ cup sun dried tomatoes
- 1 cup Greek Vinaigrette
Method
- In a large pot of salted boiling water, add pasta noodles and cook according to package directions for an al dente noodle. Drain and rinse the pasta with cool water.
- After the pasta has drained well, add into a large bowl with red onion, cucumber, feta cheese cubes, cherry tomatoes, sun-dried tomatoes, and 1 cup Greek vinaigrette until noodles and veggies are well coated. Taste test for dressing and add in more to adjust to taste level.
- Serve at room temperature or refrigerated.
