In need of a flavorful vegetarian appetizer and tired of a crudite platter?! We hear and you and feta is here to help! These crispy air-fried artichoke hearts are served with a bright and lemon whipped feta dip. Serve these up with ice cold rosè for a memorable summer patio snack.
Ingredients
- 2 cans quartered artichokes, drained
- 3-4 tsp old bay seasoning
- Chopped fresh parsley
- Olive oil
- 1/4 cup mayonnaise
- 1/4 cup Athenos whipped feta
- 2 tbsp freshly chopped parsley
- 2 tsp dijon mustard
- 1/2 tsp garlic powder
- 1 lemon zest
- 1/2 lemon juiced
Method
- Prepare the lemon whipped feta: add mayonnaise, whipped feta, parsley, dijon mustard, garlic powder, lemon zest and lemon juice to a food processor. Blend until creamy and combined. Transfer to a small bowl, cover and refrigerate until artichokes are finished.
- Preheat the air fryer to 390 F. Pat artichokes dry with a paper towel. Drizzle with olive oil and season generously with old bay seasoning. Place artichokes into the air fryer basket ensuring enough space between them to brown evenly (fry in batches if needed).
- Air fry for five minutes, check and turn artichokes, and continue to air fry for 3-4 minutes or until golden brown.
- Sprinkle artichokes with fresh parsley and serve with lemon-whipped feta.
