A simple and delicious pasta dish that features sweet cherry tomatoes and tangy feta cheese, perfect for a quick dinner.
Ingredients
- 8 oz pasta (such as spaghetti or linguine)
- 2 cups cherry tomatoes
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 tsp crushed red pepper flakes (optional)
- Kosher salt
- Cracked black pepper
- 1/2 cup Athenos Crumbled Traditional Feta Cheese
- 1/4 cup fresh basil leaves, torn
- Zest of 1 lemon (optional)
Method
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the cherry tomatoes and cook, stirring occasionally, until they start to burst, about 7-10 minutes. Add the minced garlic and red pepper flakes, if using, and cook for another 1-2 minutes until fragrant.
- Add the cooked pasta to the skillet with the burst tomatoes. Toss to coat, adding reserved pasta water as needed to create a light sauce.
- Remove from heat and stir in the Athenos Crumbled Feta Cheese, torn basil leaves, and lemon zest, if using. Season with salt and cracked black pepper to taste. Serve immediately, garnished with extra feta and basil if desired.
