This simple, yet flavorful pasta is the perfect dish to make for an easy dinner. Made with just five main ingredients and ready in less than twenty minutes, it's a weeknight wonder!
Ingredients
- 8 oz penne pasta
- 1 tbsp olive oil
- 1 lb shrimp, deveined and peeled
- 2 tsp cajun seasoning
- 1 - 15 oz jar alfredo sauce
- 1/3 cup Athenos Feta Cheese Crumbles
- Chopped Oregano (optional for garnish)
Method
- In a medium-sized saucepan, boil water and salt it. Add your pasta, and cook according to the package instructions until al dente. When the pasta is cooked, reserve 1 cup of the pasta water and drain the pasta.
- In a skillet over medium heat, add olive oil. Cook the shrimp for a minute, then season evenly with salt, pepper, and cajun seasoning. Cook for 3-4 minutes or until the shrimp is cooked through and opaque. Remove from the pan and set aside on a plate.
- Turn the skillet to low and add in alfredo sauce. Heat until lightly simmering. Add in the pasta and cooked shrimp (with its juices) back to the pan. Add in the feta cheese crumbles and stir together gently. Heat until the pasta is warmed through and lightly simmer in the sauce.
- Garnish with chopped parsley or oregano if desired.
