This fresh chicken dinner is made with just five main ingredients and pairs perfectly with a fresh green salad for a light and tasty dinner.
Ingredients
- 4 small boneless and skinless chicken breasts
- 2 tsp garlic powder
- 4 slices feta cheese
- 1/4 cup pesto, + 2 tbsp for chicken
- 1 cup cherry tomatoes, halved
- Fresh basil, for garnish (optional)
Method
- Preheat oven to 400 F. Line a sheet pan with parchment paper and add the chicken breasts onto the sheet pan. Season chicken breasts evenly with garlic powder, kosher salt, and cracked black pepper. Bake for 10 minutes.
- Remove chicken breasts from the oven and brush on the 2 tbsp of pesto evenly and layer on feta cheese. Bake for an additional 5-10 minutes or until chicken reaches an internal temperature of 165 F. Remove from the oven.
- In a bowl toss together tomatoes with pesto and spoon evenly over the chicken breasts before serving. Garnish with fresh basil.
