Your favorite citrus chicken street taco has been topped with Athenos Tajin Feta for a sharp flavor upgrade. Add the spicy feta crumbles alongside freshly chopped cilantro and onions.
Ingredients
- 1.5 lbs chicken breast or thighs
- 1 packet taco seasoning
- 2 limes, juiced
- 1 orange, juiced
- Oil
- Athenos Tajin Crumbled Feta
- 1 cup chopped fresh cilantro
- ½ cup chopped onion
- 1 lime, cut into wedges
- 20-24 corn tortillas (taco size), lightly charred
Method
- In a large bowl add lime juice, orange juice, taco seasoning and mix together until smooth. Add in chicken thighs or breasts and coat chicken in the marinade mixture.
- Cover and marinate chicken in the refrigerator for 1-4 hours. Remove chicken from the fridge.
- Grill chicken directly on a grill for 4-5 minutes on each side on a grill on medium-high heat or until the chicken reaches 165 F internally and is cooked through.
- To cook on a pan on the stove top, brush the grill pan with oil and cook chicken for 5-6 minutes on each side on medium high heat or until the chicken reaches 165 F internally.
- Let the chicken rest for 4-5 minutes covered with foil. Chop into cubes.
- Serve a few tablespoons of chicken on corn tortillas with freshly chopped onions, cilantro and Athenos Tajin Feta. Serve with lime wedges on the side.
