This rich, caramel orange cranberry sauce is perfectly paired with a bed of Athenos Whipped Feta. Prepare an easy batch of this homemade cranberry sauce and once cooled, spread a layer of Athenos whipped feta inside a shallow bowl or platter as a tangy base to your rich cranberries. Spread on turkey, ham, or any other holiday protein.
Ingredients
- 1 (12 oz) bag of cranberries (fresh or frozen)
- ½ cup brown sugar
- ¼ cup honey
- Zest and juice from an orange
- Pinch of kosher salt
- 1 (8 oz) container of Athenos Whipped Feta
Method
- In a medium saucepan, combine cranberries, brown sugar, honey, orange zest, orange juice, and a pinch of salt. Bring to a simmer over medium heat.
- Cook the mixture until most of the cranberries have burst and the sauce thickens, stirring frequently. The sauce should coat the back of a spoon.
- Remove the sauce from heat and allow it to cool to room temperature.
- In a shallow bowl or platter, spread the whipped feta in an even layer. Top with the cooled cranberry sauce and serve.
- Optional: Garnish with extra orange zest before serving.
Note: This dish can be prepared the night before. Follow steps 1 and 2, store the cooled cranberry sauce in an airtight container, and refrigerate. Before serving, spread the whipped feta and top with the cranberry sauce.
