Ingredients
- 1/2 lb elbow pasta noodles
- 1/2 small yellow onion, grated
- 2 carrots, grated
- 1 1/4 cup mayonnaise
- 1/4 cup sweet pickle relish
- 1 tsp apple cider vinegar
- Freshly ground black pepper
- 1/2 cup Athenos Traditional Feta Cheese Crumbles
- 2-3 green onions, thinly sliced
Method
- Bring a large stock pot with water to a rolling boil. Add a few tablespoons of kosher salt and boil the shell bows for 10-12 minutes or until al dente.
- Drain macaroni noodles and set aside.
- In a large bowl combine cooked noodles, grated onion, carrots, 1 cup of mayonnaise, sweet pickle relish, apple cider vinegar, feta cheese crumbles, and pepper to taste. Cover the bowl and chill for 30 minutes.
- Before serving, stir in the remaining 1/4 cup of mayonnaise. Taste test for salt and pepper and top with green onions
