If you need an easy, and deliciously tasty vegetable side dish to your holiday menu, make these simple golden roasted carrots with feta! Roasting the carrots adds a delicious depth of flavor and the feta cheese makes each bite tangy and delicious.
Ingredients
- 2 lbs carrots, peeled and cut into 2-inch pieces on a bias
- 2 tbsp olive oil
- 1 tsp kosher salt
- Cracked black pepper
- 1 tsp garlic powder
- 1 tsp dried oregano (or dried herb of choice)
- ½ cup Athenos Traditional Feta Cheese Crumbles
Method
- Preheat the oven to 425°F.
- Peel and cut the carrots lengthwise, then slice into 2-inch pieces on a diagonal bias. Place the carrots on a large baking tray.
- Drizzle the carrots with olive oil, kosher salt, cracked black pepper, garlic powder, and dried oregano. Toss to coat evenly and spread into a single layer with space between each piece.
- Bake for 20 minutes. Remove from the oven, stir, and flip the carrots. Return to the oven for an additional 10 minutes.
- Remove from the oven and sprinkle with feta cheese. Bake for another 5-10 minutes, until the feta melts slightly and becomes golden brown.
- Transfer to a serving dish and sprinkle with extra feta cheese before serving.
