A light and fresh appetizer to serve at any outdoor gathering. Switch up normal tomatoes with crisp cucumbers and creamy feta cheese.
Ingredients
- 1/2 baguette, sliced
- Olive oil
- 1 cucumber, diced
- 1 tbsp olive oil
- 1/2 cup Athenos Crumbled Traditional Feta Cheese
- 1/2 tsp salt
- 1/2 tsp cracked black pepper
- 8-10 fresh basil leaves, thinly sliced
Method
- Preheat the oven to 400 F. Spread baguette slices onto a baking sheet and drizzle lightly with olive oil. Bake for 7-10 minutes or until lightly toasted and golden.
- While bread is toasting, make the cucumber mixture. In a medium mixing bowl add diced cucumber, olive oil, feta cheese, salt, cracked black pepper, and basil leaves.
- Spoon cucumber mixture onto baguette slices and top with extra small basil leaves if desired.
