This protein-packed salad is a great make-ahead dish to be used in lunches and dinners all week long.
Ingredients
- 2 cups cooked forbidden rice
- 1 cup cooked edamame (shelled)
- 1/2 cup shredded carrots
- 1/4 cup chopped green onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup Athenos Traditional Feta Cheese Crumbles
- 1/2 cup sesame vinaigrette
Method
- In a large bowl toss together rice, edamame, carrots, green onions, cilantro, feta cheese crumbles and dressing until evenly combined.
- Garnish with extra cilantro, feta cheese, and green onions before serving.
