This new viral way to make eggs has explored all the options! Try it out with pesto, harissa or your favorite hot sauce but don't forget extra feta as these are HIGHLY addicting to make!
Ingredients
- 1/4 cup Athenos Crumbled Traditional Feta Cheese
- 1-2 whole eggs
- 1 medium tortilla
- 1/2 avocado, mashed
- Chili flakes or hot sauce
- Fresh herbs
Method
- Heat a small non-stick pan on medium heat. Add an outer circle of feta cheese to the pan and cook for 1-2 minutes.
- Crack open the eggs into the center of the pan and cook for another 3-4 minutes or until the eggs are cooked to your liking and the bottom of the feta layer is golden brown.
- Remove eggs from the pan, and heat the tortilla on each side for 10-20 seconds or until golden.
- Top the eggs onto the tortilla and top with hot sauce and fresh herbs.
