This ultra-chopped, spoon-style salad is brimming with crunchy vegetables, protein-packed chickpeas, tangy feta cheese, and swimming in a classic Greek vinaigrette.
Ingredients
- 1 (15 oz) can of chickpeas, drained and rinsed
- 1 cucumber, finely diced
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, quartered
- 1/4 cup chopped pepperchinis
- 1/3 cup Athenos Traditional feta cheese crumbles
- 1/3 cup greek vinaigrette
Method
- In a large bowl add chickpeas, cucumber, red bell pepper, cherry tomatoes, pepperchinis, feta cheese crumbles and greek vinaigrette. Toss together until well combined and coated evenly with vinaigrette.
