This Greek Couscous Salad is a vibrant, zesty twist on pasta salad. It features pearled couscous combined with crisp cucumbers, juicy tomatoes, and creamy feta cheese, all enhanced by fresh dill and basil for a refreshing and flavorful dish.
Ingredients
- 1 cup whole wheat couscous, uncooked
- 1 cup halved cucumber slices
- 1 large tomato, chopped
- 1 pkg. (4 oz.) Athenos Crumbled Feta Cheese
- 1 tbsp. chopped fresh dill
- ½ cup Italian or Greek dressing
- 2 tbsp chopped fresh basil
Method
- Cook the couscous according to the package directions. Transfer to a large bowl and cool for 10 minutes.
- Add the cucumbers, tomatoes, feta cheese, fresh dill, and fresh basil to the cooled couscous. Mix well.
- Pour in the Italian or Greek dressing and toss until all ingredients are evenly coated.
- Taste and adjust seasoning with salt and pepper if needed.
- Serve immediately at room temperature or chill in the refrigerator until ready to serve.
