This grilled classic is reinvented with tangy and creamy feta cheese! Dripping in buttery flavor and sprinkled with Tajin for an extra kick.
Ingredients
- 4-6 ears of corn, shucked
- Olive oil
- 1/3 cup melted butter
- 1/3 cup mayonnaise
- 1 tbsp tajin
- 3 oz Athenos feta cheese crumbles
- 1 cup chopped cilantro
Method
- Shuck and clean each corn on the cob. Brush an even layer of olive oil onto each of the ears corn.
- Preheat a grill pan to medium-high heat or a grill to medium-high temperature. Add the corn on the grill pan and cook for 8-10 minutes, turning 2-3 times while cooking. Corn should be slightly darker in color and charred on the outside.
- Once the corn is finished cooking, brush evenly with melted butter and mayonnaise on all sides.
- Sprinkle evenly with tajin, feta cheese crumbles and chopped cilantro.
