This grilled vegetable-based side dish is bursting with flavor. Charred juicy zucchini chunks topped with fresh herbs and tangy feta cheese make for the perfect light bite to any grilled proteins.
Ingredients
- 3 zucchini, cut in half lengthwise
- 3 ears of fresh corn
- Olive oil
- Kosher Salt
- Cracked black pepper
- 3 oz Athenos Crumbled Traditional Feta Cheese
- 10 fresh mint leaves, torn
- 3 cups arugula
- 1/3 cup toasted pumpkin seeds
- 2 tbsp olive oil
- Juice 1/2 lemon
Method
- Drizzle zucchini and corn evenly with olive oil, sprinkle evenly with kosher salt and cracked black pepper. Grill zucchini on a grill pan or gas grill for 2-3 minutes on each side and corn for 6-8 minutes on each side or until charred and golden. Remove from heat, let cool for 2-3 minutes and then slice into large chunks.
- Slice fresh corn kernels off the cob and cut zucchini into large chunks. Add to a medium mixing bowl. Add mint leaves arugula, pumpkin seeds and feta cheese. Drizzle with olive oil and lemon juice and toss together gently before serving.
