These honey glazed carrots are an easy holiday side dish. Equal parts sweet and tangy that will compliment any herby protein!
Ingredients
- 2 lbs whole carrots, peeled and cut into 2 inch diagonals
- 3 tbsp olive oil
- 2 tbsp honey
- 1 tsp garlic powder
- 1/2 tsp salt
- Cracked black pepper
- 1/2 cup fresh parsley, chopped
- 1/2 cup Athenos Feta Crumbles
- 1/4 cup chopped pistachios
Method
- Preheat the oven to 425 F. Add carrots to a large baking sheet. Drizzle evenly with olive oil, honey, garlic powder, salt, and a few turns of freshly cracked black pepper. Toss together to evenly coat carrots with seasoning
- Bake Carrots for 35-40 minutes or until golden brown and tender. Stir half way through to ensure even baking.
- Remove from the oven and transfer to a serving platter. Sprinkle the top evenly with Feta cheese crumbles, chopped pistachios, and fresh parsley.
