Ingredients
- Chili oil
- 1-2 eggs
- 1 large slice sourdough or french bread
- 2 tbsp Athenos Pine Nut Hummus
- Fresh Cilantro leaves
Method
- Heat a non-stick skillet on medium-low heat. Add 2 tsp of chili oil and spread evenly into the pan. Crack in 1-2 eggs and cook for 3-4 minutes or until the whites are set and the yolk is to desired done-ness (I did medium sunny side up).
- Toast sourdough bread slice and spread on Athenos pine nut hummus evenly.
- Top toast with egg, another 1-2 tsp of chili oil, and fresh cilantro leaves.
