This Lemon Feta Kale Salad is a refreshing and nutritious dish, featuring kale tossed with creamy feta, crunchy almonds, and a tangy lemon vinaigrette. It's perfect for a light lunch or a vibrant side dish.
Ingredients
- 1 head of lacinato kale, stems removed and chopped into thin strips
- 1/4 cup sliced almonds
- 1/3 cup Athenos Traditional Feta Cheese Crumbles
- 1/4 cup olive oil + extra for massaging kale
- 1 lemon, squeezed
- 1 tsp dijon mustard
- 1 tsp honey
- 1/2 tsp kosher salt
- Cracked black pepper
Method
- Add chopped kale to a medium mixing bowl and drizzle very lightly with olive oil. Massage the kale gently until the leaves are a bit darker in color and tender.
- In a small mason jar or bowl, whisk together olive oil, dijon mustard, honey, kosher salt, and a few turns of cracked black pepper. Whisk together until the dressing has emulsified.
- To the kale, add sliced almonds and feta cheese crumbles. Drizzle the top with the dressing and toss together before serving.
