These roasted garlic and feta sweet potatoes are the perfect earthy and hearty side dish for any holiday menu. These simple roasted sweet potatoes are made with a few simple ingredients and full of fall flavors!
Ingredients
- 2 whole sweet potatoes, thinly sliced
- ⅓ cup Athenos Traditional Feta Cheese Crumbles
- 3 tsp minced garlic cloves
- 2 tbsp minced rosemary
- 2 tbsp thyme sprigs
- 1 tbsp olive oil
- 2 tbsp melted butter
- 2 tsp kosher salt
- Cracked black pepper, to taste
Method
- Preheat the oven to 400 F.
- Thinly slice sweet potatoes with a sharp knife or with a mandolin.
- In a large bowl add sweet potato slices, feta cheese, minced garlic, rosemary, thyme, olive oil, melted butter, kosher salt and a few turns of cracked black pepper.
- Mix potatoes well until all of the slices are coated in the mixture.
- Arrange slices in a clockwise circle of an oven proof skillet or large casserole dish.
- Bake for 30-40 minutes or until the potatoes are fork tender and golden. Top with extra feta cheese. Top with extra feta cheese before serving.
