This creamy southwest salad is filled with fresh vegetables and fun textures. Tajin feta is the perfect addition to this classic providing an extra layer of bold flavor and spice!
Ingredients
- 6 cups chopped romaine lettuce
- 1 cup black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 cup fire roasted corn, drained
- 1 persian cucumber, diced
- 1/2 cup chopped cilantro
- 3/4 cup tajin feta crumbles
- Southwest creamy salad dressing
Method
1. In a large bowl or serving platter add chopped romaine lettuce.
2. Top lettuce with black beans, red bell peppers, fire roasted corn, cucumber, cilantro and tajin feta crumbles. If serving salad right away, drizzle generously with southwest salad dressing and toss together before serving.
3. If prepping for later, cover salad tightly, refrigerate and toss salad with dressing just before serving.
