Ingredients
- 1 sheet puff pastry homemade rough puff or store bought, thawed
- 5 oz frozen spinach, thawed
- 1 tsp garlic minced
- 2 oz Athenos feta cheese crumbles
- 2 tablespoons minced fresh parsley
- 1/2 teaspoon kosher salt
Method
- Preheat oven to 400 F
- Roll out puff pastry on a large cutting board or surface. Sprinkle puff pastry evenly with spinach, garlic, feta cheese crumbles, fresh parsley, and kosher salt.
- Roll the sheet of puff pastry width-wise until a roll has formed (like a cinnamon roll). Cut 1-inch pieces with a sharp knife. Place each piece onto a baking sheet lined with parchment paper. Bake rolls for 15-20 minutes or until puffed and golden brown.
- Top with extra fresh parsley for garnish if desired.
