This simple, sophisticated salad bursts with fresh citrus flavor and tangy feta cheese.
Ingredients
- 1/2 head / bunch of Lacinato Kale, chopped
- Olive oil
- 4 cups chopped butter lettuce or little gem lettuce
- 1 ripe peeled and sliced or segmented Sunkist Grapefruit
- 1 ripe peeled and sliced or segmented Sunkist Navel Oranges
- 1/4 cup dried cranberries
- 1/2 ripe avocado, sliced
- 3 oz Athenos Crumbled Traditional Feta Cheese
- 1/3 cup pepitas
- 1/2 cup champagne vinaigrette
Method
- Add chopped kale to a large mixing bowl and drizzle very lightly with olive oil. Massage the kale gently until the leaves are a bit darker in color and tender. Add the rest of the lettuce to the massaged kale and toss gently.
- Add the citrus fruit, cranberries, sliced avocado, pepitas, and feta cheese crumbles to the mix.
- Drizzle the top with champagne vinaigrette and toss together before serving.
