A lighter, healthier version of the legendary taco salad! This easy taco salad is made with a few simple fresh ingredients. The zesty tajin feta and bold taco meat pack made this salad protein rich and full of flavor!
Ingredients
- 4 cups romaine lettuce, chopped
- ¼ red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 2 tsp olive oil
- 1 lb ground turkey
- 1 packet of taco seasoning
- ½ cup water
- ⅓ cup tajin feta cheese
- Creamy cilantro dressing
- Tajin seasoning
Method
1.Heat a non-stick skillet on medium heat. Add in olive oil and ground turkey. Break apart the ground turkey and cook for 7-8 minutes or until cooked through.
2. Once turkey has just finished cooking add in the packet of taco seasoning and ½ cup water. Stir together and cook for 1-2 minutes or until most of the water has evaporated. Remove from heat and set aside to let the turkey cool.
3. In a large bowl add romaine lettuce, red onion, cherry tomatoes and tajin feta. Drizzle with desired amount of creamy cilantro dressing and toss salad ingredients together. Distribute salad into 4 smaller salad bowls or 2 larger bowls. Top with cooked turkey taco meat and a sprinkle of tajin seasoning.
