A fun new take (and shape!) on the classic feta watermelon salad! Grab your melon baller and put it to work with this funky triple melon salad. Perfect for bbq’s and summer dinner parties.
Ingredients
- ½ small cantaloupe melon, seeded
- ½ small honeydew melon, seeded
- ½ mini watermelon
- 1 ½ tbsp extra virgin olive oil
- ¼ tsp salt
- Cracked black pepper
- 2 oz prosciutto, torn into pieces
- 3 oz Athenos Traditional Crumbled Feta Cheese
- 8 slices fresh basil leaves, thinly sliced, slightly torn
- 1-2 tbsp balsamic glaze
Method
- With a melon baller tool, carve out melon balls into each half of cantaloupe, honeydew, and watermelon and place into a large mixing bowl.
- Drizzle melon balls with olive oil, salt and a few turns of fresh cracked black pepper. Transfer to a serving platter.
- Place prosciutto slices evenly in between melon pieces. Sprinkle evenly with Athenos traditional crumbled feta cheese and fresh basil pieces. Drizzle with balsamic glaze.
