Ingredients
- 4 cups seedless watermelon cut into small triangles
- 1 tbsp olive oil
- Juice of two limes
- 1 tbsp Tajin
- 3 oz Athenos feta cheese crumbles
- 1 jalapeno, thinly sliced
- 1/3 cup chopped cilantro
Method
- Add the watermelon chunks to a large mixing bowl. Drizzle with olive oil, lime juice and tajin and gently toss together until the tajin has coated all the chunks.
- Add watermelon to a serving platter and top evenly with feta cheese crumbles, jalapeno slices, and chopped cilantro.
