It's not summer without feta and watermelon! These watermelon feta tajin skewers are the perfect transportable appetizer for summer.
Ingredients
- 4 cups watermelon chunks
- 20 fresh basil leaves
- 2 limes, juiced and zested
- ¼ cup agave syrup
- ½ jalapeno, minced
- 1 cup Athenos feta cheese crumbles
- Tajin
Method
- Skewer watermelon chunks and fresh basil leaves evenly onto skewers and place on a large platter.
- In a small bowl whisk together lime juice, lime zest, agave syrup and jalapeno. Drizzle over watermelon skewers and let marinate for 20-30 minutes in the refrigerator. Sprinkle generously with tajin and feta cheese before serving.
